Oven baked eggs
To make this meal you only need the desired number of eggs, some olive oil, salt, pepper and a sheet pan. The first step is preheating oven to 425℉ and leaving the (empty) sheet pan inside for about 15 minutes. In the meantime, crack the eggs in a measuring cup, trying not to crack yolks.
When the pan is heated, remove it from the oven, coat it with olive oil and pour eggs carefully. Put the pan back in the oven and bake it at the same temperature until the desired doneness.
Pasta and veggies
For this meal you will need: 1 cup of chopped onion, 6 chopped garlic cloves, 1 can of diced tomatoes, 1½ chicken stock, 8 ounces of your favorite spaghetti, 10 ounces of fresh spinach, 1 ounce of grated Parmesan cheese, oregano, salt and olive oil. You can also add some ground meat to make it more nutritious.
Heat saucepan over medium heat and add oil to coat it. Add onion and garlic and stir-fry for about 3 minutes. Add in the following order: tomatoes, stock, oregano and pasta and bring to a boil. Cover the pan, reduce the heat to medium-low, and cook for about 7 minutes. Add salt and then spinach and stir it well. Remove from heat, let it stand for about 5 minutes and sprinkle it with cheese.
Oven grilled cheese sandwiches
This recipe requires 10 thick slices of white bread, herbed goat cheese, 5 slices of Cheddar cheese, 5 slices of Swiss cheese and some unsalted butter. However, you can use any cheese you prefer.
Preheat oven to 425℉ then put the butter on a sheet pan and place it in the oven until the butter melts. Spread the goat cheese on 5 slices of bread, put 1 slice of Cheddar on each and place them on the pan. Now, put 1 slice of Swiss on each of the plain bread slices and also place these on the pan. Bake it for about 7 minutes and then remove from oven to assemble the sandwiches and put them back for another 3 or 4 minutes.
